Instant Pot Shredded Chicken

One of my favorite types of foods to make for meal prepping is one that I can eat in different ways. What do I mean by this? I mean that I can create different types of meals out of that one cook. For instance, I could make a sandwich out of it, or have it with some rice, or perhaps make some nachos. Those are the best recipes, in my opinion. This instant pot shredded chicken recipe allows you to do just that. You can make any of those meals I just mentioned with just this chicken… And of course, it’s super flavorful and easy to make. Oh! and did I mention that it’s all cooked in an instant pot?

This is a Venezuelan style shredded chicken. It’s what we call “pollo mechado”. If you’re not familiar with Venezuelan food, let me tell you, it’s the best! I may be a tad biased… but honestly, it really is amazing.

Ingredients

Flavorful food doesn’t have to be complicated or take hours to make. Half of the ingredients are more than likely ones you already have in your kitchen: onions, red bell peppers, garlic, and salt. Additionally, you will need boneless chicken thighs, finely chopped tomatoes and cumin. You can find the finely chopped tomatoes in the pasta sauce aisle in the supermarket. Keep in mind that it is not a pasta sauce, it is just tomatoes. No herbs added or anything else. I use the brand Pomi, but any other like it will work.

Preparation

When you have all your ingredients chopped, put them all in the instant pot, give them a mix, and put to cook. Once it’s cooked, the chicken should be soft enough that it shreds easily. Make sure to let chicken cool down a bit before you start shredding it, especially if you are using your hands.

Speaking about shredding chicken, here’s a tip: use a hand held mixer. It is SO much faster and easier to shred the chicken this way. You can thank me later :). If you don’t have a mixer, then you can do it the old fashioned way, with two forks or with your hands. Simply start pulling apart the cooked chicken with the two forks or with your hands to create the strings. It will take longer to do, but it can be done.

This instant pot shredded chicken is all about Venezuelan flavors. I find myself constantly coming back to this recipe because it’s quick and delicious, perfect for when I don’t want to spend a long time in the kitchen. It also freezes well. I like to freeze half of it to have on hand for anytime I don’t feel like cooking. If you have a larger capacity instant pot, you could also double the recipe and freeze one full batch.

Instant Pot Shredded Chicken

This is a Venezuelan style shredded chicken. It’s what we call “pollo mechado”. If you’re not familiar with Venezuelan food, let me tell you, it’s the best! I may be a tad biased… but honestly, it really is amazing.

Cook Time 25 minutes
Servings 8

Ingredients
 

  • 750 gr finely chopped tomatoes (such as Pomi)
  • 1 medium red bell pepper (sliced)
  • 1 medium yellow onion (sliced)
  • 4 garlic cloves
  • 1 ½ Tbsp ground cumin
  • 1 Tbsp olive oil
  • 2 Tbsp sea salt
  • 3 lbs boneless chicken thighs

Instructions
 

  • In the bowl of an instant pot, add in all the ingredients except the chicken thighs. Stir to mix them together.
  • Add in the chicken thighs and mix with the sauce.
  • Cover with the lid and set to cook on manual high for 25 minutes.
  • Once complete, carefully set the valve quick release to release the pressure.
  • Remove the lid. Use two forks to pull apart the chicken. Alternatively, use a hand mixer to shred the chicken (see notes).
  • Mix the chicken one more time with the sauce.
  • Serve warm.
